Hello, Chris! Great to see you and Appropedia here - page looks great.

In terms of packaging content for the XO, you should get in touch with Arael8, jblucks, and Mitchellncharity, who are packaging (and creating scripts for packaging) Wikipedia. You could use the same scripts for packing up your content once you select/edit articles.

The library is made of .xol files (just .zip files renamed) which is how you package your content for the library once you've decided which content you want to share. Creating a content bundle has instructions on how to wrap things in .xol files for the library. See the wikipedia .xol on Library grid for an example - it's just straight html stuffed into folders (automatically extracted by the wiki via mitchell & co's magical script).

Re: Summer of Content - head over to Summer of Content organizations and make yourself an org profile, then to Summer of Content mentors to make mentor profiles for each of Appropedia's volunteers (to recruit mentors, Summer of Content/Templates has some cut-n-paste text to make life easier). The easiest way to get funding is to ask a company or org you usually partner with to sponsor some stipends for you - point out that you're providing mentors and everything, and that for $2500 they can sponsor 5 interns for the whole summer. We can help you look for funding if that's the biggest problem. Feel free to stop by the OLPC corner anytime during Wikimania if you'd like to talk about this.

I'll pass your info on to the IDDS kids and try to get them your packages for testing - they leave around August 11 or so, so if you let me know where to point them towards before that, I'll pass the word on.
